“In 1989, we started the Chicken Brunello. This is a classic. My father came up with it. His name is Bruno, so it came after him. I’m going to show you guys how to make it today.

So what we do is we take a little bit of chicken breast. We chop it up. Start it with some butter. We’re going to add some fresh mushrooms, a little bit of salt, pepper, parsley. Going to add some marsala, tomato sauce. Lastly, a little bit of heavy cream. We serve it with penne pasta. Let that sauce get nice, rich, creamy.

One day, my dad was in the kitchen. He didn’t know what to eat. And he said, you know what? I want to make something new. So he started this dish. And it’s been a fan favorite.

Mamma Lucia is originator of Chicken Brunello. I’ve seen this dish around, you know, some other restaurants and, you know, often imitated but never duplicated.”
